This was the dish I always asked my Mom to make for my birthday growing up. It takes a bit of time, but it is sooo good!
1 cup pork loin cut in 1 inch squares.
1 whole green pepper cut in diamond shape pieces
6 pieces 1 inch long green onion
2 T preserved ginger, sliced
1 T. corn starch
6 C. melted lard
Suace
4 T vinegar
4 T sugar
1 tsp. salt
2 T. hot water
2 T. Worschester sauce
3 T. catsup
1 tsp. corn starch
Pound pork until thin then cut into 1 inch squares.
Sprinkle with salt.
Make paste with 1 T. corn starch and 1 T. water. Add to pork.
Work well with fingers to mix.
Let stand 15 minutes.
Cut vegetables and set aside.
Make sauce and set aside.
Roll pork squares one at a time in 2 tsp. corn starch until all are evenly coated,
Melt 6 lard, heat until hot; do not boil.
Slowly slip in pork, 2 or 3 pieces at a time. Fry for 5 minutes until brown.
Take pan from heat and remove pork. Drain lard.
Put pan back on heat with only 1 T lard in it. When hot add vegetables and cook 2 or 3 minutes. Add sauce and pork and stir gently. Serve.

Abby and John's Pizza Dough
1.Heat oven to 200 degrees.
2. In a bowl, add 1/4 to 1/2 C. warm water and 2 1/4 tsp. yeast. Add sugar or honey to activate yeast. Wait 5 to 10 minutes until yeast is frothy.
3. Add a couple cups of water, 2 tsp salt and 1/2 stick of butter (chopped into tablespoons).
4. Add flour until it gets too stiff to mix with a spoon. Mix with hands until dough is smooth.
5. Cover with a towel and let rise in warmed oven (turn off heat) for 1 hour.
6. Divide dough and roll out.
7. Oil pizza pan with olive oil. Place rolled out dough on pizza pan.
8. Spread dough with olive oil and prick the dough with a fork in several places.
9. Move oven racks so one is on the bottom shelf and the other is on the top shelf in the oven.
10. Bake at 425 degrees on bottom rack of oven for 5-10 minutes. Remove from oven, add sauce, cheese and toppings. Place back in oven on top rack to bake until done.

Becca's Honey Baked Chicken
4.5 lb. whole chicken
1 1/2 C. water
2 Chicken bouyon cubes
Salt and pepper
Oregano
Garlic Salt
Basal

Place chicken in 9 x 13 baking dish and add ingedients. Cover with foil and bake 2 hours at 375 degrees. Baste chicken every 30 minutes with drippings from the pan.

Norma's Potato Salad
I'm not a huge fan of "crunchy stuff" in my potato salad so when I tried this recipe by an old boyfriend's mother, it was perfect for me! I know you are supposed to eat potato salad cold, but I love this recipe warm! It is heavy on the egg, so cut back on the egg if you want. I like it like this! Yumm!
3 to 4 C. cubed potatoes (boiled until you can put a fork in easily)
6 hard boiled eggs
Set eggs and potatoes in the refrigerator over night.
Add 1 C. Miracle Whip
3/4 C. Best Foods (Hellman's) mayonaise
3 T. mustard
2 T sweet relish
Sprinkle paprika over the top
